This eel-like looking fish has densely mottled dark grey and white skin. Available wild-caught, it is a bottom-dwelling marine fish found along the southern coast of Australia, from Perth to Port Macquarie including Bass Strait and around Tasmania.
The LING group are well regarded eating fish for their firm, white flesh that holds its shape under most cooking methods. The moist flesh can be made into fish cakes and is well suited to smoking or salt curing as a replacement for the traditional cod.
